Ingredients (serves 1 person)
- •2 large eggs
- •1 slice whole wheat bread
- •250g fresh spinach
- •0.5 cup cherry tomatoes, halved
- •2 Tbsp crumbled feta cheese
- •0.5 Tbsp extra virgin olive oil
- •Salt and pepper, to taste
Instructions
- 1.Heat half of the oil in a skillet over medium heat. Add tomatoes and cook until they soften, about 8-10 minutes. Stir in spinach and cook just until wilted, 2-3 minutes. Season lightly, then transfer to a bowl.
- 2.Whisk the eggs with a pinch of salt. Add the remaining oil to the skillet, pour in the eggs, and stir gently until soft curds form.
- 3.Toast the bread slice to your liking and place it on a plate.
- 4.Layer the scrambled eggs on the toast, top with spinach and roasted tomatoes, then finish with crumbled feta and a crack of black pepper. Serve immediately.
