Ingredients (serves 1 person)

  • 2 large eggs
  • 1 slice whole wheat bread
  • 250g fresh spinach
  • 0.5 cup cherry tomatoes, halved
  • 2 Tbsp crumbled feta cheese
  • 0.5 Tbsp extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. 1.Heat half of the oil in a skillet over medium heat. Add tomatoes and cook until they soften, about 8-10 minutes. Stir in spinach and cook just until wilted, 2-3 minutes. Season lightly, then transfer to a bowl.
  2. 2.Whisk the eggs with a pinch of salt. Add the remaining oil to the skillet, pour in the eggs, and stir gently until soft curds form.
  3. 3.Toast the bread slice to your liking and place it on a plate.
  4. 4.Layer the scrambled eggs on the toast, top with spinach and roasted tomatoes, then finish with crumbled feta and a crack of black pepper. Serve immediately.
