Ingredients (serves 1 person)

  • 170g Atlantic salmon fillet
  • 200g sweet potato, cut into cubes
  • 900g fresh spinach
  • 40g red cabbage, thinly sliced and pickled
  • ¾ Tbsp chipotle mayonnaise
  • 1 tsp olive oil
  • ¼ tsp salt

Instructions

  1. 1.Heat oven to 200°C (400°F). Toss sweet potato cubes with olive oil and salt. Spread on a baking sheet and roast for 25–30 minutes, turning once, until tender and caramelized.
  2. 2.Place salmon on a lined baking sheet, season lightly with salt, and bake at 200°C (400°F) for 12–15 minutes, until just cooked through. Drizzle with chipotle mayonnaise.
  3. 3.Add spinach to a pan over medium heat and cook for 2–3 minutes until fully wilted. Season lightly with salt.
  4. 4.Add roasted sweet potatoes to a bowl, followed by wilted spinach and pickled red cabbage. Top with the baked salmon and serve warm.
