Ingredients (serves 1 person)

  • 2 cassava flour tortillas
  • 180g sockeye salmon fillet
  • ½ avocado, diced
  • 1 tbsp plain nonfat Greek yogurt
  • 4 Tbsp chopped cilantro
  • A handful of pickled red onions
  • ½ lime
  • 2 tsp mild taco seasoning from Siete
  • Salt and pepper, to taste

Instructions

  1. 1.Pat the salmon dry, season with salt, pepper, and 1 tsp taco seasoning. Place directly on an oven-safe dish and broil 10 minutes, until crispy at the edges and cooked through. Flake into chunks.
  2. 2.Toast each tortilla in a dry skillet over medium heat, 30 seconds per side.
  3. 3.In a bowl, mash avocado with yogurt, 1 tsp taco seasoning, half the cilantro, and a squeeze of lime.
  4. 4.Spread the avocado-yogurt sauce evenly over both tortillas. Top with salmon, pickled onions, and the remaining cilantro. Finish with another squeeze of lime.
