Ingredients (serves 1 person)
- •2 cassava flour tortillas
- •180g sockeye salmon fillet
- •½ avocado, diced
- •1 tbsp plain nonfat Greek yogurt
- •4 Tbsp chopped cilantro
- •A handful of pickled red onions
- •½ lime
- •2 tsp mild taco seasoning from Siete
- •Salt and pepper, to taste
Instructions
- 1.Pat the salmon dry, season with salt, pepper, and 1 tsp taco seasoning. Place directly on an oven-safe dish and broil 20 minutes, until crispy at the edges and cooked through. Flake into chunks.
- 2.Toast each tortilla in a dry skillet over medium heat, 30 seconds per side.
- 3.In a bowl, mash avocado with yogurt, 1 tsp taco seasoning, half the cilantro, and a squeeze of lime.
- 4.Spread the avocado-yogurt sauce evenly over both tortillas. Top with salmon, pickled onions, and the remaining cilantro. Finish with another squeeze of lime.
