Ingredients (serves 1 person)

  • 1 egg (50g)
  • 1 tbsp vanilla protein powder
  • 1/3 banana
  • 1 tsp baking powder
  • 1 tbsp dry quick oats
  • 1 tbsp collagen powder
  • 0.5 tsp coconut oil
  • 0.5 tbsp peanut butter
  • 2 tbsp cottage cheese
  • 4-5 raspberries
  • 4-5 blackberries

Instructions

  1. 1.In a bowl, whisk together the egg, vanilla protein powder, mashed banana, baking powder, quick oats, and collagen peptides until smooth.
  2. 2.Heat the coconut oil in a skillet over medium heat. Pour in the batter to form a pancake and cook for 2–3 minutes per side until golden and set.
  3. 3.Place the pancake on a plate. Serve with a side of peanut butter, cottage cheese, raspberries, and blackberries. Enjoy!
