Ingredients (serves 1 person)
- •2 eggs
- •2 Tbsp (28g) cottage cheese
- •A splash of olive oil
- •1 medium slice (44g) whole wheat sourdough bread
- •4 strawberries, fresh
- •0.25 cup (37g) blueberries, fresh
Instructions
- 1.In a small bowl, whisk the eggs with the cottage cheese until combined.
- 2.Warm the olive oil in a nonstick skillet over medium heat. Add the egg mixture and cook, stirring gently, until the eggs are just set, about 2–3 minutes.
- 3.Toast the bread. Spread or spoon the cooked eggs onto the toast.
- 4.Serve with the strawberries and blueberries on the side.
