Ingredients (serves 1 person)

  • 2 eggs
  • 2 Tbsp (28g) cottage cheese
  • A splash of olive oil
  • 1 medium slice (44g) whole wheat sourdough bread
  • 4 strawberries, fresh
  • 0.25 cup (37g) blueberries, fresh

Instructions

  1. 1.In a small bowl, whisk the eggs with the cottage cheese until combined.
  2. 2.Warm the olive oil in a nonstick skillet over medium heat. Add the egg mixture and cook, stirring gently, until the eggs are just set, about 2–3 minutes.
  3. 3.Toast the bread. Spread or spoon the cooked eggs onto the toast.
  4. 4.Serve with the strawberries and blueberries on the side.
