Ingredients (serves 1 person)
- •330g red potatoes (~2 small-medium)
- •1 medium zucchini
- •1 large red bell pepper
- •1 cod filet
- •7g olive oil (½ Tbsp)
- •Salt & pepper (to taste)
Instructions
- 1.Cut potatoes into bite-size pieces, toss with half the oil, salt, and pepper. Air-fry at 200 °C (400 °F) for 20-30 minutes (or roast in the oven for 20–25 minutes).
- 2.Season cod with salt and pepper. Sear in a skillet with remaining oil, 3–4 minutes per side, until it flakes.
- 3.In the same skillet, sauté sliced zucchini and bell pepper for 5–7 minutes, seasoning to taste.
