Ingredients (serves 1 person)

  • 175g chicken breast (skin removed)
  • 0.5 cups garbanzo beans (chickpeas)
  • 0.5 cups cherry tomato
  • 0.5 medium slice of sourdough bread
  • 1-2 tbsp parmesan cheese (grated)
  • 2 tbsp homemade Caesar dressing
  • 2 cups kale
  • A drizzle of olive oil (optional)

Instructions

  1. 1.Season the chicken breast and sauté or bake until thoroughly cooked. Let rest, then slice or chop.
  2. 2.Lightly toast the sourdough cubes in a dry skillet or oven until golden.
  3. 3.In a bowl, massage the kale with a drizzle of olive oil (optional) until softened.
  4. 4.Add garbanzo beans and tomato to the kale, then toss with Caesar dressing.
