Ingredients (serves 1 person)
- •175g chicken breast (skin removed)
- •0.5 cups garbanzo beans (chickpeas)
- •0.5 cups cherry tomato
- •0.5 medium slice of sourdough bread
- •1-2 tbsp parmesan cheese (grated)
- •2 tbsp homemade Caesar dressing
- •2 cups kale
- •A drizzle of olive oil (optional)
Instructions
- 1.Season the chicken breast and sauté or bake until thoroughly cooked. Let rest, then slice or chop.
- 2.Lightly toast the sourdough cubes in a dry skillet or oven until golden.
- 3.In a bowl, massage the kale with a drizzle of olive oil (optional) until softened.
- 4.Add garbanzo beans and tomato to the kale, then toss with Caesar dressing.
- 5.Top the salad with chicken, toasted bread cubes, and Parmesan cheese. Enjoy!
