High protein green pea soup

Ingredients (serves 1 person)
- •1.5 cups green peas
- •2 shallots
- •1 garlic clove
- •2 tbsp olive oil
- •2 tbsp vinegar
- •1 cup fresh parsley
- •85g tofu
- •1.5 cups bone broth
- •Toppings of your choice
- •Sourdough toast (as a side)
Instructions
- 1.Chop shallot and add olive oil and vinegar to a deep pan, fry until golden
- 2.Add the rest of the ingredients (except for toppings) to the pan, cook for about 5-7min
- 3.Add everything to a food processor or mixer (we use vitamix)
- 4.Once silky, transfer soup back to the pan and heat until it's hot
- 5.Serve on a plate and add toppings and sourdough toast as a side
